Mechanism of action

Aged garlic conversion produces S-allylcysteine (SAC) and reduces volatile allicin. SAC has antioxidant and cardiovascular protective effects with much better tolerability than raw garlic. Modulates nitric oxide synthesis; reduces LDL oxidation; modulates platelet aggregation.

History

Garlic has been used medicinally for millennia. Aged garlic extract was developed in Japan in the 1960s — slow fermentation of fresh garlic over 18-24 months converts the volatile allicin to more stable, water-soluble compounds. The branded Kyolic form has the largest evidence base. Multiple cardiovascular trials support use.
